{Summer fun & a grateful heart}

Hmmmmmm, Mama's Peach Pie :)

Last night we went out to my parent's house for dinner. David and Joshua had taken my parents, aka Papa & Grandy, to the State Farmer's Market and Seafood Market yesterday on a "field trip". My mom loves to make pickles and jam and "put up corn" so she came home with a huge load of work to do!!! She LOVES it, so it's not terrible work to her. Anyway, they also bought some great food for dinner:

  • sliced cucumbers, tomatoes, peppers.
It was an amazing meal---healthy & so, so FRESH---I didn't take any pictures of the oysters, but David grilled them in a garlic butter sauce and they were so amazing---but that is for another post when I remember to take photos! (even if you aren't an oyster fan, you might like these---they were so good!)
On to the Peach Pie~My mom is a great cook---and she LOVES to cook. Some days she will just make 3 different pots of soup to put in the freezer because she enjoys it. Growing up she didn't make a lot of fruit pies, but she could if she needed to----she just usually made "cream" pies--chocolate, banana cream, coconut cream, etc. But when I walked in the door of her house last night I saw this beautiful pie on the counter! She told me she had pulled out her Better Homes and Gardens Cookbook that she had gotten as a wedding gift----(51 years ago), and looked at the recipe, tweaked it a little and out came this beautiful pie! We had great food, then sat around the table and just talked and told stories---David and I were part of the "telling" this time---not just my parents. My children LOVED it---they heard stories that they hadn't heard in years or if they had, they didn't remember them. They shared dreams/stories of their own....it was a lovely evening.

Oh, the grateful part---of course I'm grateful to the Lord for good food, and my sweet family---and just sharing the evening with them. But the "intended grateful part" happened toward the end of the meal, a man rang the doorbell and told us that he thought there was a fire out by my parent's grill---we walked out the garage door and saw this:













The grill had flashed---I hate to say exploded, because it must not have lasted that long because the trash can next to the grill wasn't melted at all---anyway, either way, it caught fire somehow and must have sent embers flying and caught the grass around it on fire---when we came out, there was an 8 foot circle on fire around the grill (well, the driveway wasn't on fire, of course!!). Anyway, we are so grateful that this didn't happen when David and my dad were grilling. We aren't really sure how it happened, but we have a few theories that I won't bore you with. It would have been so awful had it happened even 15-20 minutes earlier. SO, THIS is what we are grateful for....that the Lord spared David and Daddy, and that there wasn't a larger fire....that their neighbor "followed his nose" on his walk with his dog and then came and told us about it. In the scheme of life---the cost of a grill just isn't that big of a deal when you think about it---the Nelson's have grateful, humble hearts today! Now we are off to work in the yard---we have to move a bunch of rocks back up onto the bed of our creek---it's an annual thing, but we usually try to do it in late spring when it's not so hot and the mosquitoes aren't so bad---OH, that didn't happen this year, so here we are in August....moving rocks--off to work! Mama's Peach Pie
1 T. Lemon Juice
3/4 c. sugar
3 T. cornstarch
sprinkle of nutmeg (or cinnamon--or both, she just couldn't find her cinnamon!)
1-2 T. Amaretto Liqueur (or 1 t. almond flavoring)
5 c. peeled & sliced peaches
2 pie crusts

Put one pie crust in a 9" pie plate. Drain peaches--reserving the juice. Add sliced peaches to the pie plate. Cook juice and first 5 ingredients over medium heat until it thickens. Cover the peaches with this mixture (or you can add them together in a separate bowl to coat and then put them in the pie crust.) Dot with butter. Add the second pie crust and cut steam holes. Bake in a 400 degree oven for 45 minutes. After you remove it, add a little butter to the crust and sprinkle sugar on top.

Serve warm with Bluebell Homemade Vanilla if possible---it's the best ice cream in the country!

Oh my goodness, what a story! I would be freaking out if that happened to our grill. BUT.....my mother and her mother too, had cookbooks JUST like that, and I got my mom's. Falling apart & rusty, I just could barely use it. Then, miracle of miracles, they reprinted it, so I have a nice new one! I hated to part with my mom's (sentimentality) but I did. My daughter doesn't cook a thing, so I'll probably never pass it down! So nice to know there are still originals out there. The pie looks delicious, BTW!
